Only once a year, during the late-summer hop harvest, do brewers get the chance to use freshly-harvested, raw whole cone hops in our beers. This year we had 60 pounds of Simcoe hops shipped overnight straight from the hop fields and brewed with them only hours after their arrival. Simconium is a pale, crisp wet-hopped American IPA with fragrant floral aroma and flavors of lemon, pine, and rose flowers.
